Gastronomic Seminar Comes to an End with Call for the Preservation and Spreading of Culinary Traditions in Cuba, the Caribbean

“The grand challenge presently faced by the culinary art all over the world is obtaining a balance between pleasure and health, from each region’s characteristics”, Mr. Rafael Anson said, Chairman of the Royal Gastronomy Academy of Spain and the Latin American Gastronomy Academy, during a master lecture that focused attendees’ attention on the final sessions of “La Restauración en Cuba y el Caribe: Fusión y Maridaje” International Gastronomic Seminar, organized and held this week by Excelencias Group in Havana.

Mr. Anson stressed that every country has the right to posses its own academy, and the Caribbean counts on special features in terms of food and its preparation.

He commented that mankind has tried for centuries to develop human senses such as sight or ear, but it has neglected others just like the sense of touch, smell and taste. “However, we need to promote the sensitivity of these and educate people so they can appreciate the delights of such a sublime and natural action, that’s eating”, he mentioned.

Anson added that Cuba could be an excellent venue for the Caribbean gastronomy academy, for it is committed to rescuing and preserving culinary art in this region.

The acclaimed expert on Latin American gastronomy was given the medal to the culinary friendship by Eddy Fernandez, president of Cuba’s Federation of Culinary Associations. Anson attended the awarding-ceremony of “Sabor Caribe” contest, which was launched before the seminar and was focused on the Best Starter, Main Dish, Dessert and Grand Prize to the Finest Pairing. Almost one hundred and half recipes were sent to this contest by chefs and sommeliers from several countries of the region.

During the seminar’s closing-ceremony, organized by Excelencias Group as part of the tribute for the 100th issue of it “Excelencias Turisticas del Caribe y las Americas” magazine, attendees also enjoyed a performance by “La Colmenita” Children Theater Company.
