By Jose Carlos de Santiago
With fresh ingredients from the country and a wide variety of gastronomic offerings, the culinary festival Saborea Puerto Rico was held.
It boasted more than 20 pavilions that offered visitors the best quality food in a familiar environment.
Among the restaurants that offered their products were Eclipse@Mountain Village, Raw, Freak Food and Fridas Mexican, among others.
On the other hand, Tortilla Doña Lola was found in the local products in collaboration with Fridas Mexican Restaurant.
Food Freak was also present, offering a rice with chicken paella style with a traditional style made by chef Alberto Laboy.
On the other hand, the president of the Association of Hotels and Tourism, Clarissa Jiménez, said that this event is aimed at delivering the best products to both tourists and Puerto Ricans.
TASTING SESSIONS
The eleventh edition of Saborea Puerto Rico was filled with innovative recipes with the participation of a large group of patio and international chefs.
The group of chefs that demonstrated their diverse recipes was made up of Mia Castro, Fernando Parrilla, Lorraine Colon, Giovanna Huyke and chef Enrique Garcelán.
While the chefs showed their different recipes, they exposed their culinary experiences and tricks to the select public that gave the different demonstrations. At the same time, the spectators were given a variety of local products through raffles and different dynamics.
On the other hand, chef Enrique Garcelán had the opportunity to show a very peculiar recipe composed of Capuchino de Chivo.
The chef demonstrated through this innovative recipe that he enjoys the unpredictable, as he affirmed for an interview with El Vocero that he likes to break cookie-cutter patterns in the kitchen.
However, chef Lorraine Colón -considered by many as the mother of local cooking- showed a fresh mojito salad composed of eggplant, potato and chajote, among other ingredients.
The chef said that this salad could be ideal for Easter, because it can be served hot, cold, or at a time temperature.
While showing his recipe, he made reference to the evolution of the kitchen through technology. "The culinary technology is easier, but we must evolve with respect," said the chef, who has been in the culinary industry for more than 14 years.
Among the different recipes and cocktails that were offered to the public was a vegetable sangria, margaritas, pickled fish with arepas and mofongos croquettes.
The Justin Wines white and rosé wines were also presented to the public with a detailed explanation of them.
The wide tasting of wines offered by Ambrosia Fine Wines were the most requested by the public on the second day of the gastronomic festival Saborea Puerto Rico.
